Golden Oysters are a fast-growing, vibrant yellow mushroom that fruits well at room temperature and above. Pleurotus citrinopileatus resemble a bouquet of beautiful yellow flowers, smell like fresh watermelon, and taste like roasted nuts when you fry them in butter or oil.

Mature mushrooms are extremely fragile and break when handled too roughly, so this species has a reduced shelf life. However, the incredible flavors and colors are absolutely worth cultivating!

Cultivation Information:

Golden Oyster Mushrooms are beautiful, fast-fruiting warm-weather species. The optimum fruiting temperatures are between 70-85 degrees Fahrenheit. As with all Oyster mushrooms, Golden Oysters need plenty of fresh air to develop normally. High carbon dioxide levels from mushroom growth will accumulate in sealed growing environments and can reduce cap size and elongate stems severely. Fruiting in open humidity chambers or greenhouse tents with frequent fresh air exchange will produce the best possible yields.

Aim to harvest most of the mushrooms in the first flush. Rather than picking off individual mushrooms, the cultivator should remove entire clusters or individual “bouquets” at the base with a sharp knife. This will help to minimize handling. Store in a cool location such as a cold room or refrigerator. Yellow Oysters have a short shelf life and should be sold within a couple of days of being harvested.


Golden Oysters fry up beautifully. They’re the thinnest and lightest of the Oyster mushrooms.
